Chefs from the Philippines who have received Michelin awards will meet at a Bacolod gastronomy event

Some of the Philippines’ first-ever Michelin-awarded chefs are gearing up to showcase their culinary talents at the Asia Pacific edition of Terra Madre, a prestigious sustainable gastronomy event set to take place in Bacolod City from November 19 to 23.

The festival, part of the global Slow Food movement, aims to celebrate local food cultures, promote biodiversity, and encourage environmentally sustainable practices in the food industry. It will welcome over 2,000 delegates from more than 20 countries, including chefs, farmers, food artisans, and advocates of slow and ethical eating.

This year’s edition is especially significant as it marks the first time many of the Philippines’ most recognized chefs—who have earned Michelin stars or other international accolades—will convene in one place. They will lead workshops, panel discussions, and cooking demonstrations emphasizing the use of indigenous ingredients and traditional cooking techniques.

Among the notable Filipino chefs attending are:

  • Chef Margarita Fores, the country’s first-ever Asia’s Best Female Chef, known for her dedication to Filipino flavors.
  • Chef Claude Tayag, celebrated for his innovative fusion of Filipino and international cuisine.
  • Chef Jackie Laudico, whose farm-to-table approach has gained international praise.

A Platform for Sustainable Food Advocacy

Terra Madre Asia Pacific provides a vital platform for dialogue on pressing issues like climate change, food security, and the preservation of culinary heritage. The event aligns with Bacolod’s own growing reputation as a culinary hub, famed for its local delicacies such as Chicken Inasal and Piaya.

Organizers also emphasize that the festival supports local farmers and producers by creating direct links with chefs and consumers, fostering a sustainable food ecosystem. Participating delegates will engage in immersive farm visits, food tastings, and community outreach projects.

Events and Activities

Key activities scheduled include:

  • A farmers’ market showcasing organic produce and artisanal goods.
  • Workshops on sustainable cooking methods and reducing food waste.
  • Cultural performances and food heritage storytelling sessions.
  • Special gala dinners curated by Michelin-starred chefs, featuring menus inspired by native ingredients from the Visayas region.
